Time is all what we intend to save. Be it at work, home or in the kitchen, things sometimes do not turn out to be how they should. Specially when you’re back from a hefty college day, hectic work day or your kid has kept you on your toes throughout, an extra dose of energy and nutrition is required to make up for such a busy and boisterous day. Here is a super quick recipe of a healthy salad which requires absolutely no flame and can be prepped up in 10 minutes (total).
COUSCOUS SALAD :
A super quick healthy salad is always a good idea to munch on when you are just too tired and hungry. Rather than hogging over those 2 minute Maggi noodles or munching a high calorie pack of potato chips, cookies or namkeens, this no flame couscous salad always comes to rescue. Not wasting your time on hovering about what’s to be cooked for an evening snack or a quick breakfast, this superfood – Couscous is one of the simplest and easiest forms of salad you could relish with your family/friends or uninvited sudden guests.
Health Benefits of Couscous :
- Native to Africa and Middle Eastern cuisine, couscous grains could be eaten as a side dish, salad or as a substitute of rice
- With a low calorie count of as much as 200 calorie in each cup, it is superior to rice and quinoa when it comes to grains and is quite filling as well
- It is rich in proteins and fiber
- It’s a good source of vitamin B, thaimin, riboflavin, B6 and folate acid
- Helps metabolize energy, maintain healthy RBCs and prevent many birth defects
- Couscous helps you stay full for a longer time
Let us delve into this super quick dish
RECIPE : COUSCOUS SALAD
Preparation time : 10 minutes
Serves : 4 people
Primary Ingredients :
- 1 cup couscous
- 1-1/4th of boiled water
- salt (as per taste)
- crushed pepper
- a dash of lemon
- a sprinkle of oregano/ dried herbs
Add on : I usually prefer to add in a lot of fresh vegetables and fruits (basically whatever is available in the kitchen at that point of time). You could add all, a few or none to this salad as per your discretion. Also the following ingredients mentioned are subject to availability (as per their season)
- 1 finely chopped carrot
- 1/2 roughly diced apple
- 1 chopped cucumber
- pomegranates
- 2 tbsp roasted groundnuts or walnuts
- 2-4 cherry tomatoes
- 3-4 diced strawberries
- 1/2 chopped mango
- a few chopped grapes
- finely chopped bellpeppers
- boiled chickpeas
- boiled red beans
Here as you can see in the picture above, I have used only a few ingredients to speed up the process.
METHOD :
- Boil 1 cup of drinking water
- Take separately, a glass bowl with dry couscous (1 cup) and sprinkle some salt and pepper into it
- Once your water is boiled, turn off the flame and add that water into your glass bowl containing dry and raw couscous grains
- Cover the bowl with a lid/plate for 5 mins so that it can cook along with the steam of the boiled water
- After 5-7 minutes, take off the lid and start scraping the salad with a fork (this would help you to separate the couscous grains and let it’s grains come to the room temperature by making way for the trapped heat to escape )
- Sprinkle some oregano, lemon and chopped fruits or vegetables are per your choice
- Serve immediately at room temperature or refrigerate and serve cold
Tips :
- Use the same cup to measure your water and raw couscous grains as this will help you keep uniformity in your measurements
- To add salt or not is totally a discretion. You may even have this salad as a salt-free meal with just some lemon topped up with fresh fruits and vegetables
- Once you take off the lid post adding boiled water to couscous, the grains would stick onto one another. Use a fork to scrape and separate the grains. You could even use your fingers or sprinkle some olive oil to separate the grains finely and make things easier
